Zuzi's Tail - No 6 - Meatloaf
Zuzi doesn't always like her dog food, she begs at the table (my fault, I spoil her. I don't know what I'll do when we have guests. If I lock her in the laundry room she will bark loudly and non-stop. So, either they will have to be dog lovers, or eat at their own home.) But because she really enjoyed my meatloaf I will share it with you.
Glazed Meatloaf
1 1/2 lbs. ground beef
2 eggs beaten
1/2 cup breadcrumbs (but I substituted with oatmeal)
2/3 cup sweet chili sauce
1 small onion, grated
1 Tbs. Worcestershire sauce
1/4 tsp. cayenne pepper
Mix all together and shape into a 9 x 4 loaf tin.
Bake at 350 for 45 min. and baste with chili sauce during last 10 min.
Serve with brussel sprouts and baked potato.
For dessert, a baked green apple with brown sugar and cinnamon.
